Fried Mashed Potato Balls
- 2 medium white potatoes (boiled, peeled and mashed)
- Bread crumb (the soft part of the bread)
- 1 egg white
- ½ teaspoon salt
- 1 pinch of black pepper
- ½ cup sunflower oil
- ½ cup flour
- 1 egg yolk + 1 egg lightly beaten
- ½ cup of bread crumbs
- Place the mashed potatoes, bread, egg white, and pepper in large bowl. Hand mix, cover, and leave in the fridge for 30 minutes.
- Heat the oil.
- Roll small pieces of the potato mix into balls.
- Roll each ball in flour, eggs, and bread crumbs.
- Fry until golden brown.
- Place the fried mashed potato balls on a paper towel for some time then serve.
